Winter has finally kicked in here in Sydney and I must admit that I’m having trouble finding yummy, quick and easy inspiration. I’ve baked up a big batch of Roast Pumpkin and Garlic pieces which don’t just make the house smell amazing, they are great to keep chilled in the fridge. I’ve taken portions, warmed them in the microwave and used them in a warm salad with Haloumi and rocket, scrambled eggs with pumpkin & bacon, and a frittata with black olives and spinach. Delicious and Yum!!
