Chicken, Bacon & Vegetable Soup.

I’ve been a bit sick this week with the change of weather starting to get cooler. I wanted to make a soup that had loads of vegetables, some protein and lots of garlic and onion to help make me feel better. This soup was warming and really filling. It does have some ingredients (like the carrots, sweet potato and swede) that are slightly higher in carbohydrate than others, but I was happy to have a few extra carbs and the flavours blended together beautifully.

I used some of my vegetables that weren’t quite so fresh for this recipe and kept the skin on all the vegetables, except for the swede, so I could get the most out of the fibre in the vegetables. If you want to, you can also add any other vegetables that you like like green beans, peas, shallots, etc. 




  • 3 tbsp olive oil
  • 2 large brown onion diced finely
  • 200g of finely diced bacon (rind off)
  • 4 cloves garlic sliced or 2 tsp minced garlic
  • 550g skinless chicken breast fillets cut into 1cm cubes
  • 3 celery sticks, finely diced
  • 2 large carrots, finely diced
  • 2 zucchini, finely diced
  • 2 small sweet potato, finely diced
  • 1 large Swede, finely diced
  • 2 Ltr water 
  • 4 heaped tbsp of chicken stock powder
  • salt to taste

  1. Put a very large saucepan or pot over medium heat.  Add the olive oil and onion. Cook until the onion is softened and translucent. Add the diced bacon and cook till fragrant.  Add the garlic cook until fragrant before adding the chicken. Cook the chicken till all the sides are cooked. 
  2. Add all the prepared vegetables to the pan and stir till combined. Pop on the lid and cook for 2-3 minutes taking care not to burn the base, you just want the vegetables to sweat
  3. Add the water and chicken stock powder and bring to a simmer. Simmer for 20 minutes or until the vegetables are tender and the meat fully cooked. 
  4. Serve immediately.
