Chicken Chorizo Traybake.

I love traybakes. To be able to put everything into one tray and pop it in the oven is the easiest way to prepare a healthy tasty meal. This is dish is one of my favourites and is a good end of the week dish to cleanup the fridge. Tender pieces of chicken with smokey chorizo and loads of baked vegetables. For the vegetables you can basically use any vegetables that you find in the fridge, they all work well. There are so many vegetables in this dish you can serve it by itself or with a green salad. This dish is best eaten fresh from the oven but can be frozen for up to four weeks.



  • 500g medium skinless chicken thighs cut into 6 pieces/fillet
  • olive oil for frying
  • 2 chorizo cut into chunks
  • 2 tsp crushed garlic
  • 1 large or 2 medium zucchinis
  • 2 red capsicum cut into chunks
  • 5 medium mushrooms cut into 4 pieces
  • 3 small carrots cut into chunks
  • 2 sticks celery cut into chunks
  • ¼ medium cauliflower cut into florets
  • 3 roma tomato’s cut into chunks
  • 200g black olives
  • 1 tsp sea salt
  • 1 lemon halved
  • handful fresh parsley or herbs finely chopped

  1. Pre-heat oven to 190c.
  2. Prepare the meats and vegetables keeping them in chunks around the same size.
  3. Place the vegetables across the base of the tray and spread the chicken and chorizo across the top.
  4. Dollop the crushed garlic throughout and drizzle the olive oil liberally across all the ingredients.
  5. Bake for around 1hr and 20mins turning every 25 minutes or so. Remove from the oven when the meat is fully cooked and the vegetables are tender.
  6. Remove from the oven and immediately squeeze the lemon over the tray.
  7. Sprinkle with fresh parsley or herbs and serve either by itself or with a fresh green salad.
