Lime, Garlic and Ginger Chicken Drumsticks.

Chicken drumsticks have to be the one of the cheapest meats available. They are perfect for kids, come with their own handle and are quick and easy to cook. These drumsticks are so simple to prepare, just mix the marinade in a clip lock bag and add the chicken, leave overnight and pop in the oven the next day. It couldn’t be much simpler. I love using Kaffir Lime Leaves in my dishes and I always purchase them when they are on special in the fresh herb section. I throw them into the freezer until I need to use them as they freeze really well.  The fresh lime zing that they provide is fantastic and the flavour blends beautifully with chilli, garlic and ginger. This marinade can also be used on chicken wings if you like, just reduce your cooking time accordingly.



  • 1kg chicken drumsticks skin on
  • 4 kaffir lime leaves sliced finely
  • 1 ½ tbsp fish sauce
  • Juice of 1 lime (you can add some zest as well if you like)
  • 3 tablespoons freshly chopped coriander
  • 2 tsp crushed garlic
  • 1 tsp crushed ginger
  • ½ tsp sesame oil

  1. Add all the ingredients to a clip lock bag and massage the marinade into the chicken. If you like your marinades with a little heat you can add some chopped chilli into the marinade. Pop into the fridge and allow to marinate for up to 4 hours or overnight.
  2. Preheat your oven to 170c and lay the drumsticks on a single layer in an oven proof dish. Cook the drumsticks for 45 minutes or until the internal temperature by thermometer reaches 80c at the bone. If cooking wings, cook for 35-40 minutes or until 80c against the bone. 
  3. Serve for lunch or dinner with a fresh garden salad.
