Thai Chicken with Zucchini and Coconut.

Recently I went to a Thai restaurant and tried one of their money bags. The flavour of the filling was amazing as they included one very distinctive ingredient which took the flavour profile to a whole new level. I looked through the mix and found it, toasted shredded coconut. Who knew something so simple could change the flavour so much. For this recipe I decided to use this new ingredient and the results were fantastic!! You can make this dish with either pork or chicken mince. As it has no sugar, use the squid/fish sauce and lime juice to balance the flavours. Yum!!



  • 500g chicken or pork mince
  • 1 tsp rice bran oil
  • 2 tsp minced garlic
  • 1 tsp minced ginger
  • 2 zucchini washed, cut into half and then into thin strips
  • 10 champignon’s or fresh mushrooms cut finely
  • 2 tbsp fish sauce or more if you wish
  • 1 lime cut in half, half for cooking and half to serve
  • 1/4 cup shredded coconut
  • 1/2 bunch coriander chopped, 3 tsp reserved for serving
  • 1/4 cup diced peanuts

  1. Heat the oil in a large frying pan. Add the garlic and the ginger and cook till fragrant. Add the mince and cook, breaking up the pieces and cooking until all the additional moisture is gone and the meat is dry frying. 
  2. In the meantime, add the shredded coconut to a small clean cold frying pan and put onto medium heat. Make sure you stir the coconut as the pan heats to prevent it from burning. Remove as soon as it becomes golden brown and smells toasted to a cold plate to stop it from cooking. 
  3. Add the zucchini strips and diced mushrooms, stirring till the zucchini becomes softened. Add fish sauce, the juice of half a lime, toasted coconut, peanuts and coriander stirring through evenly. 
  4. Serve into bowls sprinkled with extra coriander and lime juice.
  5. For those in the family that want carbs you can mix this meat mixture through rice vermicelli or egg noodles.
