I love desserts, my favourite flavours are chocolate and coffee so Mocha just makes perfect sense. I made this dessert with some full fat Ricotta Cheese I had in the fridge. It was so simple to make. Just add the ingredients to a mix master with a whipping head and it’s done in under 10 minutes.

With most desserts, especially dairy based ones, they are rich and a little goes a long way. This dessert is higher on the carbohydrate scale giving 4 serves at 6.8g of Carbohydrate each. As it is so rich best to keep these desserts for when you are eating over 20g of carb a day. Remove from the fridge just before serving topped with blueberries or strawberries. Yum!!!



  • 375g Ricotta Full Fat
  • 125ml Full Fat Cream
  • 2 tbsp Natvia powder or stevia to taste
  • 1 tsp Vanilla bean paste
  • 1 tsp instant coffee
  • 1 Tbsp Cocoa Powder
  • Strawberries for decoration

  1. Prepare 3 small dishes for serving. 
  2. Add all the ingredients to the mixing bowl and use a balloon whisk to beat on medium to high speed for 1 to 1 1/2 minutes until it reaches stiff peaks stage or until the mix stays firm when the whisk is removed. 
  3. Divide the mix amongst the 3 glasses gently pushing down with a spoon to level. Serve chilled with sliced strawberries or blueberries.
