Brussel Sprout Gratin

Brussel Sprouts are a great winter vegetable that can be cooked in so many different ways. It’s easy to pre-cook them in the microwave first and then bake them in the oven. This Gratin is super easy to make and really yummy. You can sprinkle with any type of cheese you like before browning in the oven. Delicious!! 



  • 500g brussel sprouts
  • 1/3 cup almond meal
  • 2 tbsp grated parmesan
  • 2 tbsp capers
  • 1 tsp salt
  • 1/4 red onion sliced finely
  • 1 tbsp extra virgin olive oil

  1. Preheat an oven to 180c. Wash and tail the stem of the brussel sprouts removing any damaged outer leaves. Place in a microwave dish with about 2 cm of water. Cover with plastic wrap leaving the corner open and microwave on high for 7 minutes. 
  2. Remove the brussel sprouts from the microwave, peel back the plastic wrap taking care not to burn yourself, drain and let them cool slightly. Cut the brussel sprouts in half and place in the base of an oven proof dish. I use tongs and a sharp knife to do this as they are quite hot. 
  3. Lay the brussel sprouts in the base of the baking dish. Sprinkle sliced onion and capers over the brussel sprouts. Top with almond meal and shredded parmesan cheese. Sprinkle with salt and drizzle librally with olive oil. Bake in the oven for 20 minutes or until the cheese is melted and the top browned. Serve hot.
