Tomato Tabouli Salad.

I love Tabouli with fresh mint and parsley. Normal Tabouli usually contains Burghul which is high not low in carbohydrate. This low carb version is suitable for Keto diets, is so easy to prepare and still has all the flavour. This salad is fresh, light and perfect for summer BBQ’s or a light dinner. The Lemon dressing cuts beautifully through fatty meats such as chargrilled chicken, beef steaks or Salmon.  




  • 1 bunch flat leaf parsley washed and chopped finely
  • 1/2 bunch fresh mint leaves chopped finely (optional)
  • 1/2 Spanish onion peeled and diced finely
  • 500g Roma Tomato’s washed and diced into small dice
  • 2 small cucumbers small dice (Optional)

Dressing Ingredients 

  • 1 tsp Lemon zest
  • Juice of 1 Lemon
  • 1/4 cup good quality Light Olive Oil
  • A few grinds of Black Pepper 
  • 1 tsp salt

  1. Prepare and cut the tomatos, onion and cucumber (if using) into a fine dice and the parsley and mint (if using) chopped finely and place into a large serving bowl.
  2. Add the dressing ingredients into a small container with a tight fiting lid and shake for a few moments until mixed well. Pour over the salad and mix through well to coat. 
  3. Serve immediately. Best eaten freshly made but can last a day in the fridge. You can also add black or marinated olives if you wish.
