Asparagus is such a treat. Sweet crunchy and absolutely delicious. It’s one of the seasonal vegetables I can’t wait to find at my local supermarket at the right time of year. Asparagus can be washed and eaten fresh for a crunchy snack or quickly boiled for just a few minutes till tender. This is one of my favourite super quick 5 minute recipes that I love to have for breakfast with or without a poached egg. Enjoy!! 



  • 2 bunches fresh asparagus spears
  • grated parmesan cheese
  • freshly cracked black pepper
  • a drizzle of virgin olive oil

  1. Bring some water to the boil. In the meantime wash the asparagus and cut the lower ends off to remove the tough end pieces. Put a frying pan over high heat and add the boiling water till half full. Place the washed and trimmed asparagus into the water ensuring that it’s covered. Put on the lid and bring to the boil. 
  2. Simmer the asparagus spears for 2-3 minutes until tender. 
  3. Remove from the hot water and place onto a plate. Sprinkle with grated parmesan cheese, a sprinkle of freshly cracked black pepper and drizzle with good quality olive oil. Absolutely Delicious.
