Brussel Sprouts with Bacon

Brussel Sprouts are one of my favourite winter vegetables. I have memories of not really liking them as a child but I must admit that my mother didn’t cook them with bacon. To save time I cook my brussel sprouts separately in chicken stock in the microwave and then caramelise them in the frying pan in the fat from the bacon. Delicious!! 



  • 500g brussel sprouts
  • 1/3 cup liquid chicken stock
  • 3 tbsp butter
  • 1 medium white onion sliced
  • 100g bacon sliced

  1. Wash and tail the stem of the brussel sprouts removing any damaged outer leaves. Place in a microwave dish and add chicken stock. Cover with plastic wrap leaving the corner open and microwave on high for 7 minutes. 
  2. Remove the brussel sprouts from the microwave, peel back the plastic wrap taking care not to burn yourself and let cool slightly. Cut the brussel sprouts in half. I use tongs and a sharp knife to do this as they are quite hot. Keep any remaining chicken stock/brussel sprout juice aside.
  3. Heat a non stick frying pan over high to medium heat and add 2 tbsp butter. Once melted add the onion and cook till browned. Add the bacon and cook till browned. Remove these from the pan and keep warm to the side. 
  4. Turn the pan down to medium to high heat. Add the remaining 1 tbsp of butter to the hot pan and melt. Add brussel sprouts to the pan cut side down and pour over the remaining chicken stock/brussel sprout juice. Cook the brussel sprouts until browned and caramelised.  Add the cooked onion and bacon and heat through. Serve immediately. Delicious!!!!
